Firstly, Proper crisps soaks the whole GMO free white corn kernel in limewater. This process of soaking increases the nutritional value, flavor and aroma. These corn kernels can then be wet ground into a Masa (dough) using Mexican volcanic stones. This process is called nixtamalization and is truly the authentic way to make corn tortillas and tortilla chips. This traditional method has almost been lost, but were bringing it back! The Masa is then carefully pressed into round tortillas, cut into traditional triangles, and hand cooked in small batches by the talented chefs at “Proper” using New Zealand grown High Oleic, cold pressed sunflower oil.
Our traditional salted Tortilla chips are seasoned with just a simple sprinkling of Marlborough sea salt… and that’s all!! We always say “that’s all” is our best ingredient, and we think you’ll agree, Delicious eaten by themselves or with one of your favorite Tortilla/Nacho based recipes. The best thing, once your done simply pop the packet in your garden compost and it will naturally decompose – how eco is that.
